German Pancakes...


One of my favorite childhood memories is of my mom yelling for us to come into the kitchen to see how high the German Pancakes had rose. We would then watch them fall and she would sift powdered sugar over the top of them. I made my own last weekend and when I opened the oven to take them out they were touching the rack above...I couldn't help but yell for Brad to come see.
Here is the recipe if you want to try for yourself:
German Pancakes

6 eggs at room temperature
1 cup flour
5 Tablespoons butter
1 cup milk
½ teaspoon salt
dash vanilla

Set oven to 450 degrees. Melt butter in a 9 x 13 pan in oven. Whip eggs until thick and a creamy yellow color (but not too much or they wont rise). Add milk, flour, salt and mix. Pour batter into pan of melted butter and bake at 450 degrees for 15 to 20 minutes until brown on edges. Pancake will rise and become high and fluffy. Dust with powdered sugar. Serve immediately with syrup or hot applesauce.

Serve 3 – 4 people

I LOVE German pancakes. I had never even had one (ok, not that I could remember) until my friend Kati made one in Spain. Mmmmmmmmmmmmmm. I might have to make some with our Christmas breakfast tomorrow...
